Super Food Snack – Spiced Edamame
Alright, this recipe could pass off almost as an act of “non-cooking” but I wanted to share this simple, and most importantly, extraordinarily healthy snack with everyone.
Edamame is one of Nature’s super foods, rich in protein, fiber, antioxidants and unsaturated omega fats. This furry little soybean is low in carbohydrates and gluten-free. It’s the perfect guilt-free, feel-good snack. I love munching on these, and they are now in season! You can find bundles of edamame at all wet markets in Hong Kong! So hurry and grab your share of this super food!
What you’ll need:
- Fresh edamame (but you can use frozen as well)
- a pinch of Sichuan peppercorn
- 1-2 star anise
- salt flakes
- 1 tsp fish sauce
First, wash and clip off the ends of each edamame pod in order to allow the spiced water to fully infuse each bean.
Sprinkle peppercorns, star anise and 0.5tbls of salt into a pot of water, and bring it to the boil.
Tumble in the fresh edamame. Boil for 5 minutes.
Drain and drizzle with fish sauce (I like to keep the peppercorns and star anise in the serving dish). I also like to sprinkle fat salt flakes on top for that extra savoury crunch.
Enjoy as an appetizer, snack, or with a cold glass of beer
